Ingredients

  • 2 large eggs
  • 2 tablespoon low-fat milk
  • 3 tablespoon grated cheddar cheese
  • 1 oz ham (1 thin slice), chopped small
  • ½ cup baby spinach chopped, packed
  • 1 green onion chopped
  • 4 cherry tomatoes sliced
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper ground

Method

  1. Coat an 8-inch silicone air fryer tray with cooking spray.
  2. In a mixing bowl or measuring cup, vigorously whisk the eggs and milk until the mixture is frothy and airy.
  3. Stir in the chopped ham, spinach, green onion, and grated cheddar cheese, then season with salt and pepper and combine thoroughly.
  4. Pour the egg mixture into the prepared silicone tray, smoothing it out evenly with a fork, then arrange the cherry tomato slices on top.
  5. Preheat your air fryer to 340°F (170°C) for a few minutes.
  6. Carefully remove the air fryer basket, place the filled silicone tray inside, and return the basket to the air fryer.
  7. Cook the omelette in the air fryer for 9 to 12 minutes.
  8. After 9 minutes, check doneness by gently lifting the edge; if it’s still runny, return it to cook for an additional 2 to 3 minutes until fully set.
  9. Take the tray out of the air fryer and set it on a heat-resistant surface.
  10. Use a spatula to carefully loosen and slide the omelette onto a plate without breaking it.
  11. Serve warm alone or with your favorite breakfast accompaniments.

Notes

  • If your air fryer is smaller than 7 quarts, use a smaller silicone tray and adjust cooking time as needed because the omelette will be thicker. Feel free to add other fillings like mushrooms, bacon, cooked sausage, or fresh herbs. This dish works well for both breakfast and lunch and can be enjoyed hot or at room temperature.
