Ingredients
  

  • 4 small zucchini (about 1 1½ pounds), quartered lengthwise
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • ½ teaspoon dried basil
  • ½ teaspoon seasoned salt
  • ½ teaspoon dried Italian seasoning
  • ⅛ teaspoon salt

Method
 

  1. Heat the oven to 450°F and set the rack in the middle position.
  2. Lightly coat a large baking sheet with cooking spray.
  3. Combine the zucchini pieces, minced garlic, and olive oil on the baking sheet and toss them well.
  4. Spread out the zucchini so they are not touching, with one cut side facing down.
  5. Roast the zucchini for 8 minutes, then flip each piece to the other cut side.
  6. Continue baking for another 8 minutes until the zucchini edges turn a beautiful golden brown.
  7. While the zucchini cooks, blend the dried basil, seasoned salt, Italian seasoning, and salt in a small bowl.
  8. Take the zucchini out of the oven and sprinkle the seasoning mix evenly over it.
  9. Gently toss the zucchini with a spatula so the seasonings coat every piece.
