Ingredients
  

  • 2 cups rigatoni or farfalle (bow-tie), regular, whole wheat, chickpea, or gluten-free
  • 1 - 2 tablespoon extra-virgin olive oil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup grated parmesan cheese

Method
 

  1. Bring a large pot of salted water to a boil and add the rigatoni. Cook al dente according to the package. When done, strain the pasta and add it directly to a mixing bowl.
  2. Meanwhile, preheat your air fryer to 380°F.
  3. Toss the cooked pasta with olive oil, Italian seasoning, garlic powder, salt, black pepper, and parmesan cheese.
  4. Add the pasta mixture to the preheated air fryer basket.
  5. Cook for 10-14 minutes until golden brown and crispy, shaking the basket at the 6-minute mark to ensure even cooking.
  6. Enjoy immediately, garnished with extra parmesan cheese and fresh parsley. Serve as a side dish or appetizer with marinara or pesto for dipping.

Notes

  • Parmesan can be substituted with Romano, Pecorino, or nutritional yeast. To make vegan, omit parmesan and use nutritional yeast. Use any pasta type including wheat, chickpea, gluten-free, or lentil. Best enjoyed fresh but leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
