Air Fryer Potato Croquettes: Easy Delicious Recipe

Ingredients
  

  • 1½-2 lbs Russet potatoes about 2-3 potatoes
  • ¼ cup unsalted butter cubed
  • ¾ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 3 tablespoon green onion or chives minced
  • ½ cup shredded cheese (mozzarella recommended)
  • 2-3 tablespoon all-purpose flour
  • 1 egg plus ½ tablespoon water for egg wash
  • ⅔ cup Panko breadcrumbs
  • Salt and pepper
  • Oil spray

Method
 

  1. Preheat air fryer to 400°F.
  2. Scrub potatoes clean and poke holes using a fork.
  3. Air fry potatoes for 45-60 minutes until fork tender, rotating every 20 minutes.
  4. Remove potatoes and cut in half lengthwise.
  5. Place cooling rack over large bowl and invert potato halves to scoop flesh; discard skins.
  6. Add butter, garlic powder, onion powder, salt, pepper, and green onion to warm potatoes.
  7. Gently mix until butter melts; stir in cheese and adjust seasoning.
  8. Portion potato mixture into 1½ tablespoon balls and place on plate.
  9. Cover with plastic wrap and freeze for 15-20 minutes.
  10. Prepare breading stations: bowl 1 with flour, salt, and pepper; bowl 2 with whisked egg and water; bowl 3 with Panko breadcrumbs, salt, and pepper.
  11. Roll each potato ball in flour, then egg wash, then Panko breadcrumbs.
  12. Preheat air fryer to 400°F and spray basket with oil.
  13. Place croquettes in basket evenly spaced and air fry for 5-7 minutes, shaking halfway through.
  14. Let cool slightly before serving.

Notes

  • Serving size ranges 16-18 depending on croquette size.
  • Use any good-melting cheese such as mozzarella, cheddar, Gouda, Monterey Jack, Gruyere, or Fontina.
  • If no wire rack is available, use a spoon to scoop potato flesh.
  • Cook times may vary by air fryer model; test with one croquette first.
