Wash your potatoes and cut them into wedges. You don’t need to peel them.
In a medium bowl, coat potato wedges with olive oil by brushing each side or tossing to coat evenly.
In a small bowl, whisk onion powder, garlic powder, Italian seasoning, sea salt, paprika, and ground pepper.
Sprinkle the spice mixture over the oiled wedges, moving them to coat all sides evenly.
Line the wedges in the air fryer basket with skin side down.
Cook at 400ºF for 15-18 minutes until golden and cooked through.
Serve immediately topped with parmesan cheese and minced parsley if desired.
