Air Fryer Salmon Bites Recipe Easy Weeknight Dinner

Ingredients
  

  • 1 ½-2 lb center cut salmon filets, skin removed and cut into approx. 1 inch pieces
  • 2 Tbsp olive oil
  • Juice of half a lemon
  • 1 Tbsp honey
  • 2 Tbsp soy sauce, tamari for gluten free
  • 3-4 garlic cloves, minced
  • ¼ tsp onion powder
  • ¾ tsp smoked paprika
  • ½ tsp pepper
  • ½ tsp sea salt
  • ½ c mayonnaise
  • 3 Tbsp sweet chili sauce
  • ½ – 1 Tbsp sriracha, vary to desired spice level
  • 2 tsp honey
  • 1 tsp rice vinegar

Method
 

  1. Cut the salmon into roughly 1-inch cubes, aiming for evenly sized pieces, and place them in a bowl.
  2. Whisk together olive oil, lemon juice, honey, soy sauce, minced garlic, onion powder, smoked paprika, pepper, and sea salt to create the marinade.
  3. Coat the salmon pieces thoroughly in the marinade and let them rest for up to 30 minutes, avoiding longer to prevent mushy texture.
  4. Arrange the salmon bites in a single layer inside the air fryer basket; work in batches if needed to avoid overcrowding.
  5. Set the air fryer to 400°F and cook the salmon bites for about 7 to 10 minutes, optionally shaking or turning once midway.
  6. Meanwhile, blend mayonnaise, sweet chili sauce, sriracha, honey, and rice vinegar in a bowl to prepare the bang bang sauce, adjusting spiciness to your liking.
  7. Once cooked, let the salmon rest for 3 to 5 minutes, then serve topped with the bang bang sauce and enjoy!

Notes

  • Store any leftover salmon bites in an airtight container in the refrigerator for 3-4 days; the bang bang sauce can last about a week when refrigerated. Reheat leftovers in the air fryer for a few minutes for best results. Salmon bites freeze well; after cooling, wrap in foil and place in a freezer-safe bag for up to 3 months. Ensure salmon pieces are as uniform in size as possible for even cooking, removing smaller pieces early if needed. Do not marinate salmon longer than 30 minutes to avoid texture changes due to lemon acid. Air fryer models may vary; monitor cooking closely to prevent overcooking.
