Air Fryer Stuffed Chicken Breasts Easy Weeknight Dinner

Ingredients
  

  • 4 (4-6 oz) each chicken breasts
  • 2 Tablespoons oil of choice
  • ½ teaspoon EACH Italian seasoning, garlic powder, chili powder, black pepper, salt
  • 4 oz cream cheese, at room temp
  • 1/4 cup Parmesan cheese
  • 1/4 cup mozzarella cheese or favorite cheese
  • Optional add-in: 2 Tablespoons chopped sundried tomatoes or pesto or feta or green chilis or 1 cup chopped spinach

Method
 

  1. Set your air fryer to 375ºF to preheat.
  2. Combine the oil with all the seasonings in a small bowl and put it aside.
  3. In a separate bowl, blend cream cheese, Parmesan, mozzarella, and pick your choice of add-in for the filling.
  4. Place each chicken breast on a cutting board and carefully slice almost through the middle, keeping it hinged.
  5. Fill each chicken breast with a quarter of the cheese mixture and fold it closed to seal in the filling.
  6. Brush the outside of each stuffed chicken breast with the oil and seasoning mix.
  7. Place the chicken in the air fryer basket and cook for 20 minutes, flipping halfway until the chicken is fully cooked and reaches 165ºF internally.

Notes

  • To store leftovers, cool the chicken completely and refrigerate in an airtight container for up to 3 days. Reheat in the oven at 350ºF for about 10 minutes or in the air fryer at 350ºF for 5 minutes until warmed through.
