- 1/4 cup olive oil
- 1 medium white onion, diced
- 3 large carrots, peeled and thinly sliced
- 3 clove garlic, minced
- 1 teaspoon turmeric
- 1 teaspoon ground ginger
- 1 teaspoon garlic powder
- Sea salt and black pepper to taste
- 6 cups chicken broth
- 2 cups creamy coconut milk (doesn’t need to be from a can but can be)
- 1 1/4 lbs boneless skinless chicken thighs or breasts
- 1 1/2 cups frozen peas
- 1 tablespoon fresh parsley, minced
- *Store in fridge for 5 days or freezer for 2 months
