Ingredients
  

  • 5 pcs cucumbers
  • 3 tsp granulated white sugar
  • 2 tsp sesame seeds
  • 1 tsp garlic, crushed
  • 2 to 3 tbsp green onion, chopped
  • 1 ½ tbsp soy sauce
  • 3 tsp rice vinegar
  • 3 tsp Chinese chili oil
  • 1 tsp sesame oil
  • 3 tsp salt

Method
 

  1. Gather all the needed ingredients for the cucumber salad.
  2. Combine the sugar, sesame seeds, crushed garlic, and chopped green onions in a mixing bowl.
  3. Add soy sauce, rice vinegar, chili oil, and sesame oil to the bowl and stir well; then set the mixture aside.
  4. Trim off both ends of each cucumber, then place a pair of chopsticks along the cucumber to prevent cutting all the way through.
  5. Make angled diagonal cuts along the length of the cucumber, then turn it over and cut perpendicularly to create a spiral effect; repeat for all cucumbers.
  6. Place the spiral-cut cucumbers in a bowl and sprinkle with salt, gently rubbing it in; let rest for 8 to 10 minutes to draw out moisture.
  7. Rinse the cucumbers thoroughly with cold water to remove excess salt.
  8. Drain well and pour the prepared marinade over the cucumbers, tossing everything until coated evenly; serve immediately or chill to enhance flavors.

Notes

  • Cut the cucumbers at an angle to get the signature spiral shape. Salting the cucumbers helps them stay crisp, but make sure to rinse well to avoid too much saltiness. For even better flavor, refrigerate the salad for at least an hour before serving.
