Ingredients

  • 3–4 large russet potatoes
  • 4 tablespoons olive oil
  • 2 teaspoons salt
  • 2 teaspoons garlic powder
  • 2 teaspoons Italian seasoning
  • ½ cup shredded parmesan cheese

Method

  1. Set your oven to 375°F (190°C) and prepare a baking sheet by greasing it lightly.
  2. Cut the potatoes into wedges and place them in a big bowl, then drizzle with olive oil and toss to coat every piece.
  3. Mix together salt, garlic powder, and Italian seasoning in a separate small bowl, then sprinkle this seasoning mix and the parmesan cheese onto the potatoes, mixing well for even coverage.
  4. Lay the coated potato wedges flat on the baking tray with the skin side down in a single layer.
  5. Bake the wedges for about 25 to 35 minutes until they become golden and can be easily pierced with a fork.
  6. If you like, finish by adding some fresh parsley to brighten up the dish before serving.

Notes

  • For extra crispiness, make sure not to overcrowd the baking sheet. These wedges pair wonderfully with grilled meats or a simple dipping sauce.
