  • 1 cup mixed veggies (broccoli, bell peppers, carrots)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • For the sauce:
  • 1/2 cup mayonnaise
  • 2 tablespoons sriracha
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • 1 teaspoon lime juice

Method
 

  1. Cut the chicken breast into bite-sized pieces.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add the chicken pieces, season with salt and pepper, and cook until browned and cooked through, about 6-8 minutes.
  4. While the chicken cooks, steam or lightly sauté the mixed veggies until tender-crisp.
  5. In a small bowl, combine mayonnaise, sriracha, honey, garlic powder, and lime juice to make the Bang Bang sauce.
  6. Once the chicken is cooked, remove from heat and toss with half of the Bang Bang sauce.
  7. Divide the cooked rice into bowls, top with mixed veggies, then the sauced chicken.
  8. Drizzle the remaining sauce over the bowls for extra flavor.
