Beef and Cabbage Stir Fry - Quick and Irresistible Dinner

This Beef and Cabbage Stir Fry is a delicious and quick Asian Beef Cabbage Stir Fry Soy Ginger dish that comes together in just one pan. Perfect as a One Pan Beef Cabbage Stir Fry Dinner, it’s a healthy, low carb main course bursting with bold Thai flavors. Tender beef pairs wonderfully with cabbage noodles in a spicy, flavorful sauce, making it a perfect meal for busy weeknights.

Ingredients
  

  • 1 pound beef, thinly sliced (I used top round)
  • 1 tablespoon oil
  • 5 cups cabbage, sliced into noodles
  • 4 tablespoons soy sauce
  • 2 teaspoons Mae Ploy curry paste (can use Thai Kitchen red curry paste to substitute)
  • 2 tablespoons sesame oil
  • 2 teaspoons rice vingear (can sub with white winte vinegar)
  • 4 tablespoons Swerve Brown sugar sweetener
  • fresh cilantro or basil for garnish (optional)

Method
 

  1. Cut the cabbage into long strips to look like noodles; slice the beef thinly as well.
  2. Heat oil in a large skillet over medium-high heat and add the beef, stirring until it just begins to brown.
  3. While the beef cooks, place the cabbage strips in a microwave-safe bowl with a tablespoon of water and microwave for 5 minutes to soften.
  4. Combine the curry paste, soy sauce, sesame oil, Swerve brown sugar sweetener, and rice vinegar in a small bowl.
  5. Once the beef is starting to brown, add the softened cabbage and pour the sauce over everything; stir well, cover, and cook for 5 minutes.
  6. If you prefer softer cabbage noodles, continue cooking covered for an additional 5 minutes.
  7. Remove from heat and garnish with fresh cilantro or basil if desired. Store any leftovers in an airtight container.
