Cut the cabbage into long strips to look like noodles; slice the beef thinly as well.
Heat oil in a large skillet over medium-high heat and add the beef, stirring until it just begins to brown.
While the beef cooks, place the cabbage strips in a microwave-safe bowl with a tablespoon of water and microwave for 5 minutes to soften.
Combine the curry paste, soy sauce, sesame oil, Swerve brown sugar sweetener, and rice vinegar in a small bowl.
Once the beef is starting to brown, add the softened cabbage and pour the sauce over everything; stir well, cover, and cook for 5 minutes.
If you prefer softer cabbage noodles, continue cooking covered for an additional 5 minutes.
Remove from heat and garnish with fresh cilantro or basil if desired. Store any leftovers in an airtight container.
