Ingredients
  

  • 2 cups low-fat cottage cheese room temperature
  • 2 large eggs
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup rolled oats
  • 1/2 cup almond milk or milk of choice
  • 1 1/2 cups fresh or frozen blueberries
  • 1/4 cup chopped nuts optional - almonds or walnuts
  • 1 tablespoon chia seeds optional
  • cooking spray or butter for greasing

Method
 

  1. Set your oven to 350°F (175°C) and coat a 9x9-inch baking dish with cooking spray or butter to prevent sticking.
  2. In a large bowl, blend the cottage cheese, eggs, honey or maple syrup, vanilla extract, cinnamon, and salt thoroughly until smooth.
  3. Add the oats and almond milk to the mixture, stir well, then let it rest for about 5 minutes to absorb the liquids.
  4. Carefully fold in the blueberries, nuts if you like, and chia seeds, taking care not to crush the berries.
  5. Transfer the batter into the prepared baking dish and smooth the top evenly.
  6. Bake for around 40 to 45 minutes until the surface turns a light golden brown and a toothpick inserted comes out clean.
  7. Allow the bake to cool for 5 to 10 minutes before cutting into portions and serving warm.

Notes

  • This breakfast bake can be made ahead by mixing the ingredients the night before and keeping it refrigerated; simply bake fresh in the morning. Store leftovers covered in the fridge for up to 4 days. You can swap blueberries for other berries if preferred. For a gluten-free option, use certified gluten-free oats.
