  • 1 pound boneless skinless chicken breasts cut into bite-sized pieces
  • 1/2 cup hot sauce (such as Frank’s RedHot)
  • 1/4 cup unsalted butter melted
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 cups cooked rice (white or brown)
  • 1 cup shredded lettuce
  • 1 cup cherry tomatoes halved
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup ranch or blue cheese dressing
  • 1/4 cup thinly sliced green onions
  • Optional sliced avocado for topping

Method
 

  1. Whisk together hot sauce and melted butter in a small bowl and set aside.
  2. Heat olive oil in a skillet over medium-high heat and season the chicken with salt and pepper. Cook the chicken for 5 to 7 minutes until browned and fully cooked.
  3. Lower the heat and pour the prepared buffalo sauce over the chicken, stirring to coat evenly. Simmer the mixture gently for 3 to 5 minutes to enhance the flavor.
  4. Spoon cooked rice into serving bowls as a base layer.
  5. Distribute the buffalo chicken evenly on top of the rice in each bowl.
  6. Add shredded lettuce and cherry tomato halves over the chicken.
  7. Sprinkle cheddar cheese and drizzle with ranch or blue cheese dressing.
  8. Finish by topping with green onions and add avocado slices if you like for extra creaminess.
  9. Serve right away while the chicken is warm and enjoy the delicious layers of flavor.
