Ingredients

  • 4 tablespoons butter (unsalted, for the base)
  • 4 cloves garlic (minced, fresh preferred)
  • 2 cups heavy cream (or half-and-half for a lighter version)
  • 1 ½ cups Parmesan cheese (freshly grated, not pre-shredded)
  • 2 tablespoons Cajun seasoning (store-bought or homemade blend)
  • ½ teaspoon smoked paprika (optional, for extra smoky flavor)
  • ½ teaspoon black pepper (freshly ground)
  • ¼ teaspoon cayenne pepper (adjust for heat preference)
  • Salt to taste (only if needed, since Cajun seasoning often contains salt)
  • 2 tablespoons olive oil (for cooking proteins like chicken or shrimp, optional)
  • Fresh parsley (chopped, for garnish)

Method

  1. Begin by gently melting the butter in a wide skillet over medium heat.
  2. Add the minced garlic and sauté it until it releases its wonderful aroma.
  3. Sprinkle in the Cajun seasoning, smoked paprika, black pepper, cayenne pepper, and salt to taste, stirring constantly to prevent the spices from burning.
  4. Slowly pour in the heavy cream and lower the heat to let the sauce simmer softly.
  5. Mix in the freshly grated Parmesan cheese, whisking until the sauce turns thick, creamy, and smooth.
  6. If you find the sauce too runny, continue simmering for a few more minutes until it reaches your desired thickness.
  7. Garnish with chopped fresh parsley before serving to add a burst of color and freshness.

Notes

  • For the best results, always use freshly grated Parmesan cheese. Adjust the cayenne and Cajun seasoning to suit your preferred spice level. To make a lighter version, substitute heavy cream with half-and-half or use reduced-fat cheese. This sauce pairs excellently with fettuccine, penne, rice, or zoodles. Use olive oil sparingly when cooking proteins to keep flavors balanced.
