Ingredients

  • 4 cups all-purpose flour, plus extra as needed
  • 1 ½ tsp baking soda
  • 1 tsp salt
  • 2 tbsp chopped fresh chives
  • 1 tbsp chopped fresh thyme
  • 1 tbsp chopped fresh rosemary
  • 1 tbsp chopped fresh sage
  • 1 cup shredded cheddar cheese
  • 1 ¾ cups buttermilk

Method

  1. Preheat the oven to 425°F.
  2. In a mixing bowl, combine the flour, baking soda, and salt, then stir.
  3. Add the chopped fresh herbs (chives, thyme, rosemary, sage) and shredded cheddar cheese.
  4. Pour in the buttermilk and stir until just combined.
  5. Turn the dough onto a lightly floured surface and knead lightly a couple of times to form a smooth ball, being careful not to over knead.
  6. Shape the dough into a 7-inch circle.
  7. Lightly flour a baking sheet and transfer the dough onto it.
  8. Dust the top with flour and score a cross about 1/2 inch deep into the dough with a sharp knife.
  9. Bake at 425°F for 15 minutes, then reduce the oven temperature to 375°F.
  10. Continue baking for 30 to 35 minutes until the bread sounds hollow when tapped on the bottom.
  11. Wrap the baked soda bread in a tea towel to cool, allowing the steam to soften the crust.
  12. Slice and enjoy your freshly baked Cheddar and Herb Soda Bread!

Notes

  • For best results, use fresh herbs and good quality cheddar. Store any leftover bread wrapped at room temperature for up to 2 days or freeze slices for longer storage.
