  • Boiled cabbage, well drained and gently pressed with paper towels to remove excess moisture.
  • Optional vegetables like bell peppers, carrots, and zucchini cooked with the meat to soften.
  • Cheese such as cheddar or alternatives like Monterey Jack or Colby or a Swiss-Gruyère blend; a mixture of cheddar and mozzarella for stretchiness.

Method
 

  1. Start by cooking your choice of ground turkey, chicken, or the mushroom and lentil mix until fully browned and tender.
  2. Prepare the cabbage by boiling it, then drain and press it gently with paper towels to get rid of any extra water.
  3. Include any additional vegetables you prefer, such as bell peppers, carrots, or zucchini, and cook them along with the meat until softened.
  4. Layer the cooked meat, vegetables, and cabbage in a baking dish and sprinkle with your preferred cheese blend.
  5. If preparing in advance, assemble the casserole, cover tightly, and refrigerate for up to 24 hours; add 10-15 minutes to the baking time when ready.
  6. Bake the casserole covered until heated through and the cheese is melted and bubbly, then uncover and bake a few more minutes for a golden top.

Notes

  • For a less watery casserole, ensure the cabbage is pressed dry before layering. Feel free to substitute the beef with ground turkey, chicken, or a vegetarian mix of mushrooms and lentils. Cheeses such as Monterey Jack, Colby, or Swiss-Gruyère offer great alternatives to cheddar. This dish can be assembled ahead of time and stored in the fridge before baking.
