Ingredients
  

  • For the stuffing:
  • 1 pound cremini mushrooms, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup butter
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste
  • For the chicken:
  • 4 boneless, skinless chicken breasts
  • 1/4 cup butter, melted
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Method
 

  1. Make the stuffing: Melt butter in a large skillet over medium heat.
  2. Add minced garlic and cook for 30 seconds until fragrant.
  3. Add chopped cremini mushrooms and cook 10-15 minutes until softened and browned.
  4. Stir in Parmesan cheese, parsley, salt, and pepper; set aside to cool.
  5. Prepare the chicken: Pound chicken breasts to even thickness.
  6. Cut a slit lengthwise in each breast to create a pocket.
  7. Fill pockets with mushroom stuffing and secure with toothpicks.
  8. Cook the chicken: Melt butter in a large skillet over medium-high heat.
  9. Season stuffed chicken breasts with salt and pepper.
  10. Cook chicken breasts 5-7 minutes per side until cooked through.
  11. Sprinkle cooked chicken breasts with Parmesan cheese.
  12. Serve immediately with desired sides.

Notes

  • For best results, use fresh mushrooms and fresh parsley. You can substitute cremini mushrooms with button mushrooms if needed. Serve with mashed potatoes or roasted vegetables for a complete meal.
