Cheesy Ranch Potatoes and Smoked Sausage for Easy Dinners

Ingredients
  

  • 1 pound smoked sausage (halal-certified, no pork)
  • 4 cups baby potatoes, halved or quartered
  • 2 tablespoons olive oil
  • 1 packet ranch seasoning mix (make sure it’s halal-certified)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1 1/2 cups shredded cheddar cheese (or a mix of your favorite cheeses)
  • 1/2 cup sour cream (optional, for serving)
  • Fresh parsley, chopped (optional, for garnish)

Method
 

  1. Preheat your oven to 400°F (200°C). Slice the smoked sausage into bite-sized pieces. In a large bowl, toss the baby potatoes with olive oil, ranch seasoning mix, garlic powder, onion powder, and black pepper until evenly coated. Spread the seasoned potatoes evenly on a baking sheet. Bake the potatoes for 20 minutes until they start to soften. Remove the baking sheet from the oven and add the sliced smoked sausage over the potatoes. Sprinkle the shredded cheddar cheese evenly on top. Return to the oven and bake for another 10-15 minutes until the cheese is melted and bubbly and the potatoes are tender. Remove from oven and let cool slightly. Serve topped with a dollop of sour cream and a sprinkle of fresh parsley, if desired.

Notes

For extra crispiness, you can broil the dish for 1-2 minutes after baking. Leftovers store well in the fridge for up to 3 days. Reheat in the oven or microwave before serving.
