Chicken Spaghetti Recipe Easy Comforting Weeknight Dinner

Ingredients
  

  • 8 ounces angel hair pasta (half of a 16 ounce box)
  • 2 cups chopped, cooked chicken
  • 2 (10.5 ounce) cans cream of chicken soup
  • 1 cup salsa
  • ½ cup sour cream
  • 1 cup Mexican cheese blend, divided use
  • 1 Tablespoon taco seasoning
  • 1 cup Mexican cheese blend
  • dried parsley (for topping, optional)

Method
 

  1. Set your oven to preheat at 350 degrees Fahrenheit and lightly grease a 9×13-inch baking dish with cooking spray.
  2. Cook the angel hair pasta according to the package instructions, then drain it thoroughly.
  3. Return the hot pasta to the pot and mix in the chopped cooked chicken, cream of chicken soup, salsa, sour cream, half of the Mexican cheese blend, and taco seasoning.
  4. Stir everything together well until the mixture is creamy and evenly combined.
  5. Transfer the pasta and chicken mixture into the prepared baking dish.
  6. Sprinkle the remaining Mexican cheese blend evenly over the top.
  7. Cover the dish tightly with foil to keep it moist while baking.
  8. Place the dish in the oven and bake for about 25 minutes, or until the casserole is heated through and bubbly.
  9. Optionally, sprinkle with dried parsley before serving for a fresh touch.
