Ingredients
  

  • 1 cup cottage cheese
  • 1 cup rolled oats
  • 1/2 cup applesauce or 1 small grated apple
  • 1 large egg
  • 1/2 tsp cinnamon
  • 1 tbsp honey or maple syrup (optional for added sweetness)
  • 1/2 tsp baking powder
  • Pinch of salt

Method
 

  1. Set your oven to 350°F (175°C) and prepare a mini muffin pan by greasing it or lining with paper cups.
  2. In a bowl, stir together the cottage cheese, oats, applesauce or grated apple, egg, cinnamon, honey or maple syrup, baking powder, and salt until the mix is smooth and uniform.
  3. Let the mixture rest for about 5 minutes so the oats soften and absorb moisture.
  4. Distribute the batter evenly among the mini muffin cups, filling each nearly full.
  5. Bake for 18 to 20 minutes until the bites are firm to the touch and lightly browned on top.
  6. Remove the pan from the oven and allow the bites to cool for several minutes before moving them to a rack to cool completely.
  7. Serve these treats warm or refrigerate them for up to 4 days to enjoy later.

Notes

  • To freeze, place the cooled bites in an airtight container and thaw them overnight in the fridge before serving. You can add chopped nuts, chocolate chips, or raisins for extra texture and flavor if you like.
