Cottage Cheese Egg Bake Casserole: Delicious and Simple

Ingredients
  

  • 10 large eggs
  • 2 cups cottage cheese
  • 1 ½ cups shredded cheddar cheese or cheese blend of choice
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried oregano optional
  • 1 cup fresh spinach chopped optional add-in
  • ½ cup diced bell peppers optional add-in
  • ½ cup cooked chicken ham or turkey bacon diced optional add-in

Method
 

  1. Set your oven to 350°F (175°C) and prepare a 9x13-inch baking pan by greasing it with butter or cooking spray.
  2. In a large bowl, beat the eggs thoroughly until the yolks and whites are fully mixed.
  3. Blend in the cottage cheese until the mixture becomes creamy and smooth.
  4. Incorporate the shredded cheddar cheese, salt, black pepper, garlic powder, onion powder, and if you like, dried oregano; stir to combine evenly.
  5. Carefully fold in any chosen extras such as chopped spinach, diced bell peppers, or cooked chicken ham or turkey bacon.
  6. Pour the mixture into the greased baking dish, spreading it out evenly with a spatula.
  7. Bake uncovered for about 45 to 55 minutes, or until the top is nicely browned, the edges have set, and the center feels firm to the touch. Check doneness by inserting a knife in the center; it should come out clean.
  8. Take the casserole out of the oven and allow it to cool for 5 minutes before cutting into squares and serving warm.

Notes

  • Prepare the mixture the evening prior and bake fresh the following morning. Store leftovers in the fridge for up to 4 days or freeze individual servings. Feel free to customize with your favorite veggies, cheese types, or herbs to suit your taste.
