Ingredients
  

  • 8 large eggs
  • 1 cup cottage cheese 0% - 2% fat recommended
  • ½ cup shredded cheese cheddar or feta
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • Optional mix-ins choose up to 1 cup total: chopped fresh spinach, diced bell peppers, broccoli florets, cooked sausage, diced ham

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. In a blender or bowl, combine eggs, cottage cheese, shredded cheese, salt, black pepper, garlic powder, and onion powder. Blend or whisk until smooth.
  3. If desired, fold in your choice of optional mix-ins like chopped spinach, bell peppers, broccoli, sausage, or ham.
  4. Grease a 12-cup muffin tin or line with silicone liners.
  5. Pour the egg mixture evenly into the muffin cups.
  6. Bake for 18-20 minutes or until the egg bites are set and lightly golden on top.
  7. Allow to cool slightly before removing from the tin.
  8. Serve warm or store in the fridge for an easy protein-packed breakfast on the go.

Notes

  • Feel free to customize with your favorite veggies or meats. These bites freeze well for convenient meal prep. Use 0%-2% fat cottage cheese for best texture.
