If desired, fold in your choice of optional mix-ins like chopped spinach, bell peppers, broccoli, sausage, or ham.
Grease a 12-cup muffin tin or line with silicone liners.
Pour the egg mixture evenly into the muffin cups.
Bake for 18-20 minutes or until the egg bites are set and lightly golden on top.
Allow to cool slightly before removing from the tin.
Serve warm or store in the fridge for an easy protein-packed breakfast on the go.
