Cottage Cheese Flatbread Recipe Easy Delicious Dinner

This Cottage Cheese Flatbread recipe is a simple and quick bread recipe perfect for an easy dinner or a family dinner. It’s gluten free, high protein, and low carb, making it a great choice for a weeknight meal or whenever you want a simple flatbread with minimal ingredients.

Ingredients
  

  • 225 g cottage cheese (full-fat)
  • 2 large eggs (in the US use XL eggs)
  • 1 tsp Italian seasoning (or seasoning of choice – see notes)
  • 0.25 tsp garlic powder

Method
 

  1. Set your oven to 180C (Fan 160C / Gas Mark 4 / 356 F) and cover a small rectangular baking tray with baking paper. Lightly oil the paper and press it well onto the tray to keep it flat.
  2. While waiting for the oven to reach temperature, combine the cottage cheese, eggs, Italian seasoning, and garlic powder in a food processor or blender. Blend everything until the mix is smooth but still a little runny.
  3. Pour the batter onto the prepared baking tray and level it out with a spatula in your preferred shape, either rectangular or circular. Be sure to spread it evenly so thinner parts don’t brown too quickly.
  4. Bake the flatbread for 30 to 35 minutes until it puffs up and the edges turn a light golden brown. Avoid over-baking to prevent excessive browning.
  5. Once baked, take it out and allow it to rest for about 15 minutes until it cools down enough to handle. Slice it in half to create two flatbreads and add your desired toppings or fillings.

Notes

  • These flatbreads keep well in the fridge for a couple of days when stored between sheets of baking paper to maintain softness. Feel free to vary the Italian seasoning with your favorite herbs or spices like oregano, smoked paprika, or mixed herbs. You can also keep the seasoning simple with just salt and pepper.
