Set your oven to 180C (Fan 160C / Gas Mark 4 / 356 F) and cover a small rectangular baking tray with baking paper. Lightly oil the paper and press it well onto the tray to keep it flat.
While waiting for the oven to reach temperature, combine the cottage cheese, eggs, Italian seasoning, and garlic powder in a food processor or blender. Blend everything until the mix is smooth but still a little runny.
Pour the batter onto the prepared baking tray and level it out with a spatula in your preferred shape, either rectangular or circular. Be sure to spread it evenly so thinner parts don’t brown too quickly.
Bake the flatbread for 30 to 35 minutes until it puffs up and the edges turn a light golden brown. Avoid over-baking to prevent excessive browning.
Once baked, take it out and allow it to rest for about 15 minutes until it cools down enough to handle. Slice it in half to create two flatbreads and add your desired toppings or fillings.
