Ingredients

  • 8 oz penne or rotini pasta
  • 3 cups broccoli florets
  • 2 cups vegetable or chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil or butter
  • Salt and pepper to taste

Method

  1. Warm the olive oil or butter in a large pot over medium heat and gently cook the minced garlic for about 1-2 minutes until fragrant.
  2. Pour in the pasta and broth, bring the mixture to a gentle boil, then lower the heat to maintain a simmer.
  3. About halfway through the pasta cooking time, fold in the broccoli florets to soften alongside the pasta.
  4. When the pasta is cooked through and tender, stir in the heavy cream and Parmesan cheese until everything is well combined and creamy.
  5. Season the dish with salt and pepper to your liking, then serve immediately while warm.

Notes

  • For a vegetarian option, use vegetable broth. Leftovers can be stored in an airtight container in the fridge for up to 3 days and reheated with a splash of cream or broth to maintain creaminess.
