Heat 1 tablespoon of olive oil in a large skillet over medium heat.
Season the chicken with salt, pepper, and Italian seasoning.
Add chicken to the skillet and cook for 6-7 minutes until golden and cooked through.
Remove chicken from skillet and set aside.
Add remaining olive oil to the skillet and cook gnocchi for 3-4 minutes, stirring occasionally, until golden.
Remove gnocchi and set aside.
Add minced garlic to the skillet and sauté for 1-2 minutes until fragrant.
Pour in chicken broth, scraping up browned bits.
Stir in heavy cream and Parmesan cheese and cook for 2-3 minutes until sauce thickens.
Return chicken and gnocchi to the skillet and toss to coat in sauce.
Stir in spinach or kale if using and cook for 1-2 minutes until wilted.
Adjust seasoning with salt, pepper, and optional red pepper flakes.
Serve hot, garnished with additional Parmesan and herbs if desired.
