Ingredients
  

  • 2 boneless skinless chicken breasts (cut into 1 inch pieces)
  • 1 teaspoon minced garlic
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • ½ onion chopped
  • 3 cups chicken broth
  • 1 can cream of chicken soup (10.5 oz can)
  • 1 ½ cup brown rice (uncooked)
  • 2 cups cheddar cheese (shredded)

Method
 

  1. Combine the chicken, minced garlic, salt, black pepper, chopped onion, chicken broth, cream of chicken soup, and brown rice in your crockpot. Mix everything well to ensure even distribution.
  2. Cover the crockpot and cook on high heat for about 3 and a half to 4 hours, until the rice has absorbed the chicken broth and is tender.
  3. Mix the shredded cheddar cheese into the hot mixture, then cover and let it sit for 5 to 7 minutes to allow the cheese to melt thoroughly.
  4. Dish out the warm cheesy chicken and rice, then serve and savor your cozy homemade dinner.

Notes

  • Brown rice works best here as it holds up well during the long cook time. Avoid using white rice as it tends to get mushy. If the dish seems too thick after cooking, slowly add more chicken broth in 1/4 cup increments until desired consistency is reached. Store leftovers in an airtight container in the fridge for up to 5 days.
