  • 3-4 boneless, skinless chicken breasts
  • Lo Mein noodles (fresh or dried)
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 2 carrots (thinly sliced)
  • 2 green onions (chopped)
  • ¼ cup low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 3 cloves fresh minced garlic

Method
 

  1. Gather all ingredients and chop vegetables into bite-sized pieces.
  2. Cook lo mein noodles according to package instructions until al dente; drain and set aside.
  3. Heat a large skillet or wok over medium-high heat.
  4. Add sesame oil and sauté the chicken until golden brown and fully cooked, about 6-8 minutes.
  5. Remove chicken from skillet.
  6. In the same pan, stir-fry bell peppers, carrots, and green onions until tender yet crisp, about 3-4 minutes.
  7. Return cooked chicken to the skillet with vegetables.
  8. Add lo mein noodles, soy sauce, minced garlic, and toss everything together until well mixed.
  9. Serve hot with extra soy sauce if desired.
