Ingredients

  • 600g / 1.3lb Chicken Tenders OR Chicken Breast, sliced into strips
  • 200g / 7oz Chilli Heatwave Doritos
  • 1 1/2 tsp Smoked Paprika
  • 1 tsp + 1/4 tsp Salt (1/4 tsp to season chicken)
  • 1 tsp Cayenne Pepper
  • 1/2 tsp Onion Powder
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Black Pepper
  • 50g / 1/3 cup Plain Flour
  • 2 Eggs, beaten
  • Oil Spray, as needed

Method

  1. Preheat oven to 200C/400F if baking.
  2. Place Doritos in a large zip-lock bag and crush with rolling pin until coarse breadcrumbs.
  3. Season chicken with 1/4 tsp salt.
  4. Prepare 3 shallow dishes: one with flour and seasoning, one with beaten eggs, one with crushed Doritos.
  5. Coat each chicken tender with flour mixture, then egg, then Doritos, ensuring thorough coating.
  6. Place coated tenders on wire rack above tray if baking or directly in air fryer basket if air frying.
  7. If air frying, space tenders, spray with oil, cook 10-12 minutes at 200C/400F, flipping and spraying halfway. Cook in batches if needed.
  8. If baking, spray tenders with oil and bake for 15-18 minutes until golden and crisp.
  9. Check for doneness and reduce heat if charred.
  10. Serve hot and enjoy!

Notes

  • Keep a bit of flaky texture in crushed Doritos for best crunch.
  • Handle tenders gently to prevent coating from falling off.
  • Timings may vary depending on tender size.
  • If you don’t have an air fryer, baking works great too.
