Ingredients

  • 3 pounds apples (half Granny Smith and half Pink Lady)
  • 1/2 cup granulated sugar
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon cornstarch
  • 1 tablespoon ground cinnamon divided
  • 1/2 cup unsalted butter (substitute melted coconut oil for vegan option)
  • 1 cup rolled oats
  • 1 cup all purpose flour (substitute gluten free 1 to 1 flour or almond flour for gluten free)
  • 1/3 cup brown sugar packed
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt

Method

  1. Preheat oven to 350 degrees F. Spray a 13 x 9" baking dish with cooking spray.
  2. Peel the apples with a vegetable peeler.
  3. Stand the apple up on a cutting board and cut each side around the core.
  4. Place each apple piece cut side down and chop into 1" chunks.
  5. In a large bowl, combine apples, granulated sugar, lemon juice, cornstarch, and 2 teaspoons ground cinnamon. Stir until combined.
  6. Pour apple mixture into prepared baking dish and spread evenly.
  7. Melt butter in a medium bowl in the microwave for 40-60 seconds.
  8. Add oats, flour, brown sugar, remaining 1 teaspoon cinnamon, and salt to the melted butter and stir until combined.
  9. Sprinkle crumble evenly over apple mixture.
  10. Bake for 50-60 minutes until bubbly and golden brown. Cover loosely with foil if browning too quickly.
  11. Cool on a wire rack for at least 15 minutes and serve warm. Enjoy!

Notes

  • Apple crisp can be assembled in advance and refrigerated until 30-45 minutes before baking (bring to room temperature before baking). Leftovers can be stored in an airtight container at room temperature for up to 2 days or refrigerated for up to 5 days (note crumble topping may get soggy). Substitute granulated and brown sugar with coconut sugar for refined sugar free. Use gluten free flour to make gluten free. Substitute butter with coconut oil for vegan/dairy free. Add chopped walnuts or pecans to topping or use chai spice instead of cinnamon.
