Ingredients
  

  • 2 whole chicken breast skinless boneless
  • 3/4 tsp salt
  • 3/4 tsp ground pepper
  • 3/4 tsp garlic powder
  • 1 tbsp olive oil
  • 8 oz. dry penne pasta
  • 1 1/2 cup croutons
  • 3 cups romaine lettuce chopped
  • 3/4 cup caesar dressing
  • 1/3 cup parmesan cheese grated

Method
 

  1. In a bowl, season the chicken breasts with salt, garlic powder, and pepper.
  2. Heat olive oil in a medium skillet over medium heat, add the chicken breasts, and sear on both sides until golden and cooked through, about 8-10 minutes.
  3. Remove the chicken from the skillet and set aside to cool.
  4. Once cooled, cut the chicken into cubes and set aside.
  5. Cook the pasta according to package instructions and set aside to cool.
  6. In a large salad bowl, combine the cubed chicken, cooked pasta, croutons, chopped romaine lettuce, Caesar dressing, and grated Parmesan cheese.
  7. Mix everything together until well combined.
  8. Transfer to a serving bowl and serve immediately.

Notes

  • For a quicker version, use store-bought rotisserie chicken. Grilling the chicken adds extra flavor. Swap chicken breasts for thighs or tenderloins if preferred. Use plenty of water when cooking pasta and stir immediately after adding to prevent sticking.
