Ingredients
  

  • 500 grams ground chicken (about 1 pound)
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1/4 cup fresh parsley, finely chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper (or to taste)
  • 1 cup plain yogurt
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil (for grilling)

Method
 

  1. In a large bowl, mix together ground chicken, finely chopped onion, minced garlic, and fresh parsley.
  2. Stir in ground cumin, coriander, salt, and black pepper until everything is evenly blended.
  3. Dampen your hands and form the mixture into elongated oval shapes for the kofta.
  4. Heat a grill or grill pan on medium-high and lightly brush it with olive oil.
  5. Cook the kofta for about 5 to 7 minutes per side until they are nicely browned and fully cooked.
  6. Combine the plain yogurt, lemon juice, and a pinch of salt in a small bowl to create the garlic yogurt sauce.
  7. Plate the grilled kofta alongside the garlic yogurt sauce and your favorite sides.

Notes

  • Allow the kofta to rest a few minutes after grilling to enhance the flavors. Ensure the internal temperature reaches 75°C (165°F) for safety. Feel free to adjust the spice amounts to suit your preference.
