French Dip Tortilla Roll Ups Easy Weeknight Dinner

These French Dip Tortilla Roll Ups are a crispy, cheesy, and flavorful twist that everyone will love. Ingredients
  

  • 1 lb thinly sliced roast beef deli style or leftover
  • 1.5 cups shredded mozzarella or provolone cheese
  • 4 large flour tortillas
  • 2 tablespoons butter melted
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried parsley
  • 2 cups beef broth for au jus
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon soy sauce
  • 1 teaspoon onion powder for au jus
  • 1 teaspoon garlic powder for au jus
  • salt and pepper to taste

Method
 

  1. Set your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Spread the tortillas out flat and place the sliced roast beef and shredded cheese along the center, leaving an inch free at both edges.
  3. Roll each tortilla up tightly and lay them on the baking sheet with the seams facing down.
  4. Brush each roll up with melted butter, then sprinkle garlic powder, onion powder, and dried parsley over the top.
  5. Bake in the oven for 12 to 15 minutes until the tortillas turn golden and the cheese melts inside.
  6. Meanwhile, make the au jus by combining beef broth, Worcestershire sauce, soy sauce, onion powder, garlic powder, salt, and pepper in a saucepan, then simmer gently for 5 to 7 minutes.
  7. Take the roll ups out of the oven, cut them into 2 to 3 inch slices, and serve warm alongside the au jus for dipping.

Notes

  • Be sure to roll the tortillas firmly and keep the seam side down to avoid them opening while baking. Avoid overfilling the tortillas which makes rolling tricky. Store leftovers in an airtight container for up to 3 days. To reheat and keep them crispy, warm in a 350°F oven for 8 to 10 minutes. Keep the au jus separate and refrigerate for up to 4 days.
