Heat olive oil in a large skillet over medium-high heat.
Add beef stew meat and sear until browned on all sides, about 5-7 minutes.
Remove beef from skillet and set aside.
In the same skillet, add baby potatoes and cook until they start to brown and soften, about 10 minutes.
Meanwhile, melt butter in a small pan and stir in minced garlic, onion powder, smoked paprika, dried thyme, and rosemary.
Pour the garlic butter sauce over the potatoes in the skillet and stir well.
Return the beef to the skillet and add beef broth.
Cover and simmer on medium-low heat for 10 minutes, until beef is tender and potatoes are fully cooked.
Season with salt and black pepper to taste.
Serve hot, spooning extra garlic butter sauce over the top.
