Garlic Butter Beef Bites & Potatoes Recipe Delight

Ingredients
  

  • 1.5 pounds Beef stew meat, cut into bite-sized pieces
  • 1 pound Baby potatoes, halved
  • 4 tablespoons Unsalted butter, melted
  • 3 cloves Garlic, minced
  • 1 teaspoon Onion powder
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Dried thyme
  • 0.5 teaspoon Dried rosemary
  • 0.5 teaspoon Salt, or to taste
  • 0.25 teaspoon Black pepper
  • 0.25 cup Beef broth
  • 1 tablespoon Olive oil

Method
 

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add beef stew meat and sear until browned on all sides, about 5-7 minutes.
  3. Remove beef from skillet and set aside.
  4. In the same skillet, add baby potatoes and cook until they start to brown and soften, about 10 minutes.
  5. Meanwhile, melt butter in a small pan and stir in minced garlic, onion powder, smoked paprika, dried thyme, and rosemary.
  6. Pour the garlic butter sauce over the potatoes in the skillet and stir well.
  7. Return the beef to the skillet and add beef broth.
  8. Cover and simmer on medium-low heat for 10 minutes, until beef is tender and potatoes are fully cooked.
  9. Season with salt and black pepper to taste.
  10. Serve hot, spooning extra garlic butter sauce over the top.

Notes

  • For extra crispiness, broil the potatoes for 2-3 minutes at the end. Leftovers keep well refrigerated for up to 3 days.
