- Set your oven to heat at 400°F (200°C) to begin.
- Combine olive oil, minced garlic, thyme, rosemary, salt, and pepper in a mixing bowl.
- Coat the chicken breasts evenly with the herb and garlic mixture and arrange them in a baking tray.
- Scatter the baby carrots around the chicken in the dish.
- Place the baking dish in the oven and roast for 25 to 30 minutes until the chicken is fully cooked and carrots are soft.
- Finish by sprinkling fresh parsley over the top before serving.
