Garlic Parmesan Chicken Meatloaf: Simple and Delicious Recipe

Ingredients
  

  • 1 lb ground chicken
  • 4 cloves fresh garlic, minced
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs (plain or Italian-seasoned)
  • 2 large eggs
  • 1 medium onion, diced
  • 2 tbsp soy sauce (low-sodium recommended)
  • 1 tsp salt
  • 1 tsp black pepper

Method
 

  1. Set your oven to 375°F (190°C) and coat a baking dish with nonstick spray.
  2. Cook the diced onion in a skillet on medium heat until translucent, about 5 minutes.
  3. Combine ground chicken, cooked onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, pepper, and half the Parmesan cheese in a bowl and stir well.
  4. Form the mixture into a loaf shape and place it in the greased baking dish.
  5. Top the loaf with the remaining Parmesan cheese and add paprika or Italian seasoning if you like.
  6. Bake in the oven for 45 to 50 minutes until the internal temperature hits 165°F (74°C).
  7. Let the meatloaf rest for 10 minutes before cutting it into slices.

Notes

  • For extra flavor, sprinkle paprika or Italian seasoning on top before baking. Leftovers keep well in the fridge for up to 3 days and reheat nicely.
