Ingredients
  

  • 1 lb boneless, skinless, chicken breasts, thinly sliced
  • 3/4 cup mayonnaise
  • 1 1/2 cup shredded parmesan cheese, divided
  • 2 garlic cloves, minced
  • 1 1/2 teaspoons garlic salt, or seasoned salt
  • 1 teaspoon freshly cracked pepper
  • chopped parsley, optional garnish

Method
 

  1. Preheat oven to 375°F.
  2. Grease a 9x13 casserole dish or large baking dish.
  3. Place chicken breasts in an even layer in the dish.
  4. In a small bowl, whisk together mayonnaise, 1/2 cup parmesan cheese, minced garlic, garlic salt, and freshly cracked pepper.
  5. Spread the mixture evenly over the chicken breasts.
  6. Sprinkle remaining 1 cup parmesan cheese over the top of the chicken.
  7. Bake for 40 minutes, or until an instant-read thermometer reads 165°F internally.
  8. Remove from oven and garnish with chopped parsley if desired.
  9. Serve hot.

Notes

  • Storage: Transfer cooled leftovers to an airtight container and refrigerate for up to 3 days. Reheat in microwave until warmed through.
  • Freeze leftovers: Freeze cooked leftovers for up to 3 months; thaw overnight in fridge before reheating.
  • Freeze uncooked: Assemble chicken in freezer-safe container, wrap with plastic wrap and foil, freeze up to 3 months. Thaw overnight and bake as directed, or bake from frozen adding 15-20 minutes until 165°F internal temperature.
