Garlic Parmesan Chicken Skewers: Easy & Delicious Recipe

Juicy chicken skewers marinated in a flavorful garlic Parmesan blend, grilled to perfection and brushed with a rich garlic butter. Perfect for an easy family dinner or a tasty BBQ treat.

Ingredients
  

  • 4 boneless chicken breasts, cubed
  • 15 medium-sized skewers
  • Marinade:
  • 1 tbsp oil
  • 1 tsp grated garlic
  • 1 tsp garlic salt
  • 1 tsp paprika
  • 1 tsp oregano
  • 2 tsp Italian seasoning (Blackstone Tuscan Herb or Tutto Italiano)
  • 1.5 tsp Blackstone Bayou Blend (Cajun seasoning)
  • 2 tbsp Parmesan cheese
  • ¼ cup Dukes Mayo
  • Garlic Butter:
  • 1 stick unsalted butter, melted
  • 2 tbsp fresh grated garlic
  • ½ tsp garlic salt
  • 1.5 tbsp flat-leaf parsley, chopped
  • 2 tbsp Parmesan cheese
  • Pinch of crushed red pepper

Method
 

  1. Cube the chicken and place it in a large bowl.
  2. Add all marinade ingredients and coat the chicken evenly.
  3. Marinate for at least 20 minutes or up to overnight.
  4. Thread the chicken cubes onto the skewers.
  5. Preheat Blackstone griddle to medium to medium-high heat and oil lightly.
  6. Place skewers on the griddle and cook each side for 2-3 minutes until cooked through.
  7. While cooking, mix melted butter with garlic, garlic salt, parsley, Parmesan, and crushed red pepper to make garlic butter.
  8. In the last few minutes of cooking, brush garlic butter over both sides of the chicken skewers.
  9. Remove skewers from heat, garnish with extra Parmesan if desired.
  10. Serve hot and enjoy!

Notes

  • For best flavor, marinate overnight. Use leftover garlic butter as a dipping sauce or drizzle over grilled veggies.
