Cube the chicken and place it in a large bowl.
Add all marinade ingredients and coat the chicken evenly.
Marinate for at least 20 minutes or up to overnight.
Thread the chicken cubes onto the skewers.
Preheat Blackstone griddle to medium to medium-high heat and oil lightly.
Place skewers on the griddle and cook each side for 2-3 minutes until cooked through.
While cooking, mix melted butter with garlic, garlic salt, parsley, Parmesan, and crushed red pepper to make garlic butter.
In the last few minutes of cooking, brush garlic butter over both sides of the chicken skewers.
Remove skewers from heat, garnish with extra Parmesan if desired.
Serve hot and enjoy!
