Ingredients
  

  • 4 boneless, skinless chicken breasts
  • 1.5 pounds baby potatoes, halved
  • 3 tablespoons olive oil
  • 1/2 cup grated Parmesan cheese
  • 5 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)

Method
 

  1. Start by coating the inside of your crockpot with a tablespoon of olive oil to prevent sticking.
  2. Layer the halved baby potatoes and chicken breasts evenly throughout the crockpot.
  3. Combine the remaining olive oil, Parmesan cheese, minced garlic, Italian seasoning, salt, and black pepper in a bowl and stir until fully mixed.
  4. Drizzle this garlic parmesan blend evenly over the chicken and potatoes to ensure great flavor coverage.
  5. Cover the crockpot and cook everything on low heat for about 4 hours, or until the chicken is completely cooked and the potatoes are soft.
  6. Sprinkle freshly chopped parsley on top right before serving to add a fresh, herby finish.

Notes

  • This dish works wonderfully as leftovers and can be stored in the fridge for up to 3 days. For extra flavor, consider adding a squeeze of lemon juice just before serving.
