Ingredients
  

  • ½ cup (1 stick / 113 g) unsalted butter, room temperature
  • ¾ cup (150 g) light brown sugar, packed
  • ¾ cup (253 g) molasses
  • 2 large eggs, room temperature
  • 1 cup (230 g) sour cream, room temperature
  • 1 teaspoon vanilla extract
  • 2 cups (250 g) all-purpose flour
  • 1 tablespoon ground ginger
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • ½ teaspoon kosher salt
  • confectioners' sugar, for dusting (optional)

Method
 

  1. Preheat your oven to 350° degrees. Spray a 9×5-inch loaf pan with nonstick cooking spray. Set aside.
  2. In the bowl of a stand mixer with the paddle attachment, cream the butter and brown sugar for about 1 minute, or until light and fluffy.
  3. Add the molasses, eggs, sour cream, and vanilla extract beating on low for another 30 seconds or until well blended, scraping down the bowl as needed.
  4. In a separate bowl, whisk together flour, ginger, cinnamon, baking powder, and salt.
  5. Gradually add the flour mixture to the wet mixture, mixing until just combined.
  6. Pour batter into the prepared loaf pan and bake for 60-75 minutes, or until a toothpick comes out with only a few crumbs, but no wet batter.
  7. Allow the loaf to cool completely, about 30 minutes.
  8. Dust with confectioners' sugar (if using). Slice and serve!
