Ingredients
  

  • 1 head green cabbage
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon garlic paste
  • 2 teaspoons fennel seeds or caraway seeds
  • 1 teaspoons kosher salt to taste
  • ½ teaspoon ground black pepper to taste
  • fresh parsley for optional garnish

Method
 

  1. Set your oven to 400 degrees Fahrenheit and prepare a baking sheet with parchment paper.
  2. Cut the cabbage into one-inch thick wedges or slices and spread them evenly across the baking sheet.
  3. Using a brush, apply half of the olive oil, garlic paste, fennel or caraway seeds, salt, and pepper onto each side of the cabbage steaks.
  4. Place the cabbage in the oven and roast without moving them for 25 minutes until the edges touching the sheet become golden brown.
  5. Carefully flip each cabbage steak with a metal spatula and roast again for 20 more minutes until tender with crisp edges.
  6. To serve, sprinkle coarsely chopped fresh parsley over the warm cabbage steaks for a fresh touch.
  7. Note that these steaks will lose their crispiness if stored and eaten the next day.

Notes

  • For best results, avoid moving the cabbage during roasting except for the single flip to ensure crisp edges. Leftovers will soften and lose crispiness, so best eaten fresh.
