Healthy Chicken Caesar Salad: Delicious & Nutritious!

This Healthy Chicken Caesar Salad combines crispy chicken schnitzel, fresh greens, and a creamy Caesar dressing for a delicious and nutritious meal that's perfect for lunch or dinner.

Ingredients
  

  • 125 g chicken breast cut & pounded into a thin schnitzel
  • 1 tbsp Greek yogurt (20-25g)
  • 1/2 tsp dijon mustard (2-3g)
  • 1/4 tsp minced garlic or garlic powder
  • Dash of paprika, mixed herbs, salt and pepper
  • 13-15 g panko breadcrumbs
  • 5 g parmesan grated
  • Dash of garlic powder, paprika, salt and pepper
  • 225-250 g white potato peeled and chopped into fries
  • 1/2 tsp olive oil (2-3g)
  • Seasonings to taste e.g peri peri salt seasoning or paprika, garlic, salt and pepper
  • 10 g light mayonnaise (about 1/2 tbsp)
  • 25 g greek yogurt (heaped tbsp)
  • 1/4 tsp minced garlic or garlic powder
  • 1/2 tsp dijon mustard
  • 1/4 tsp anchovy paste or anchovies blended to create a paste
  • 1 tbsp apple cider vinegar or red wine/white vinegar
  • 1/4 tsp Worcestershire sauce
  • 1/4-1/2 Lemon juiced
  • 3-5 g parmesan grated
  • salt & pepper to taste
  • 1/2-1 head cos, romaine or iceberg lettuce
  • 1 tsp honey (7g) (optional)
  • 2 tsp hot sauce (10g) (optional)
  • Dash of chilli flakes (optional)

Method
 

  1. Preheat oven to 200°C (400°F) for fries.
  2. Toss chopped potatoes with olive oil and seasonings, spread on baking tray, and bake for 20-25 minutes until crispy.
  3. In a bowl, mix Greek yogurt, dijon mustard, minced garlic, paprika, mixed herbs, salt and pepper.
  4. Coat chicken breast in yogurt mixture.
  5. In another bowl, combine panko breadcrumbs, grated parmesan, garlic powder, paprika, salt, and pepper.
  6. Press chicken into breadcrumb mixture to coat evenly.
  7. Pan-fry chicken in a skillet over medium heat until golden and cooked through, about 4-5 minutes per side.
  8. To make Caesar dressing, whisk together light mayonnaise, greek yogurt, minced garlic, dijon mustard, anchovy paste, vinegar, Worcestershire sauce, lemon juice, parmesan, salt, and pepper.
  9. Wash and chop lettuce and place in a large bowl.
  10. Slice cooked chicken into strips and add to lettuce.
  11. Add baked fries on the side or plate fancily with salad.
  12. Drizzle Caesar dressing over salad and toss gently to coat.
  13. Optional: Mix honey, hot sauce, and chilli flakes to create hot honey sauce and drizzle over chicken for a spicy-sweet kick.

Notes

  • For extra crunch, add homemade croutons or sprinkle additional parmesan on top. The hot honey sauce adds a delicious spicy twist, but can be omitted for a milder flavor. Store leftovers separately and consume within 2 days.
