Preheat oven to 200°C (400°F) for fries.
Toss chopped potatoes with olive oil and seasonings, spread on baking tray, and bake for 20-25 minutes until crispy.
In a bowl, mix Greek yogurt, dijon mustard, minced garlic, paprika, mixed herbs, salt and pepper.
Coat chicken breast in yogurt mixture.
In another bowl, combine panko breadcrumbs, grated parmesan, garlic powder, paprika, salt, and pepper.
Press chicken into breadcrumb mixture to coat evenly.
Pan-fry chicken in a skillet over medium heat until golden and cooked through, about 4-5 minutes per side.
To make Caesar dressing, whisk together light mayonnaise, greek yogurt, minced garlic, dijon mustard, anchovy paste, vinegar, Worcestershire sauce, lemon juice, parmesan, salt, and pepper.
Wash and chop lettuce and place in a large bowl.
Slice cooked chicken into strips and add to lettuce.
Add baked fries on the side or plate fancily with salad.
Drizzle Caesar dressing over salad and toss gently to coat.
Optional: Mix honey, hot sauce, and chilli flakes to create hot honey sauce and drizzle over chicken for a spicy-sweet kick.
