Ingredients
  

  • 1 grilled chicken breast, sliced
  • 1 tsp taco seasoning (or DIY: cumin, chili powder, smoked paprika, garlic powder)
  • ½ cup roasted corn (frozen or fresh)
  • ½ cup guacamole (avocado, lime, salt, onion)
  • 1.5 cups lettuce (romaine or butter lettuce)
  • ¼ cup shredded cheese (cotija, feta, or low-fat)
  • 2 tbsp plain Greek yogurt
  • Cilantro (optional)
  • Lime wedge (for garnish)

Method
 

  1. Season the sliced grilled chicken breast with taco seasoning.
  2. Warm the roasted corn in a skillet until slightly charred.
  3. In serving bowls, layer the lettuce as the base.
  4. Top the lettuce with seasoned chicken, charred corn, and guacamole.
  5. Sprinkle shredded cheese over the top.
  6. Drizzle plain Greek yogurt for a zesty finish.
  7. Add cilantro if desired and garnish with a lime wedge.
