Ingredients
  

  • 2 sweet potatoes, cubed
  • 1 1/2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp garlic powder
  • 1/2 tsp chili powder
  • 1/2 tsp cumin
  • 1 lb ground beef
  • 1 1/2 tsp salt
  • 2 tsp garlic powder
  • 2 tsp smoked paprika
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp pepper
  • cottage cheese
  • 2 avocados
  • 1/4 cup hot honey
  • chili flakes
  • green onion for garnish

Method
 

  1. Set your oven to heat up to 400 degrees Fahrenheit.
  2. In a mixing bowl, combine the cubed sweet potatoes with olive oil, salt, pepper, garlic powder, chili powder, and cumin, then lay them out evenly on a baking tray and roast for 20 minutes.
  3. While the sweet potatoes are cooking, place the ground beef into a medium skillet on medium heat, season with salt, garlic powder, smoked paprika, cumin, chili powder, and pepper, and cook it thoroughly until it’s nicely browned.
  4. Build your bowl by layering the roasted sweet potatoes, cooked beef, a dollop of cottage cheese, sliced avocado, followed by a drizzle of hot honey and a sprinkle of chili flakes, finishing off with chopped green onions as a garnish.
  5. Serve it up and enjoy your hearty, protein-packed meal.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently before serving. For a dairy-free option, omit cottage cheese or replace with a plant-based alternative.
