Set your oven to 400°F (200°C) to preheat.
Combine carrots and green beans in a big bowl; add olive oil, honey, lemon juice, cinnamon, nutmeg, salt, and pepper, then mix until all veggies are coated well.
Arrange the vegetables evenly on a baking tray in a single layer.
Place the tray in the oven and roast for about 20 to 25 minutes, stirring once midway, until carrots are soft and caramelized while green beans remain slightly crisp.
Once done, take out the tray and transfer the veggies to a serving plate.
Sprinkle fresh chopped parsley on top and serve warm.
