Honey Roasted Chicken with Sweet Figs: Easy to Love Meal

Ingredients
  

  • 4 chicken thighs, bone-in and skin-on
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil
  • 3 tablespoons honey
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground black pepper
  • 1 cup fresh or dried figs, halved or quartered
  • 1/4 cup white wine or chicken broth (optional, for roasting pan)
  • Fresh thyme sprigs, for garnish (optional)

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Season chicken thighs generously with salt and black pepper.
  3. In a small bowl, combine olive oil, honey, minced garlic, thyme leaves, ground cinnamon, and ground black pepper to create the honey glaze.
  4. Heat an oven-safe skillet over medium-high heat and brown the chicken thighs skin-side down for 5 minutes until golden and crispy.
  5. Flip the chicken and brush the honey glaze over the thighs.
  6. Add figs around the chicken in the skillet.
  7. Pour white wine or chicken broth into the pan if using.
  8. Transfer the skillet to the oven and roast for 25-30 minutes until the chicken is cooked through and the glaze is caramelized.
  9. Remove from oven and let rest for 5 minutes.
  10. Garnish with fresh thyme sprigs before serving.

Notes

  • Use dried figs if fresh are unavailable; soak them briefly in warm water. Serve with roasted vegetables or a fresh salad for a complete meal. Leftovers keep well refrigerated for up to 3 days.
