Ingredients
  

  • 500 g chicken breast fillet (cut into strips)
  • 3 tbsp honey
  • 2 tbsp mustard (medium spicy or sweet, to taste)
  • 1 tbsp soy sauce
  • 1 garlic clove (finely chopped)
  • 1 tsp paprika powder
  • 1 tsp olive oil
  • salt and pepper (to taste)
  • fresh parsley or chives (for garnish)
  • 250 g basmati rice or jasmine rice
  • 500 ml water
  • 1 tsp salt

Method
 

  1. Rinse the rice under cold water until the water runs clear, then combine it with water and salt in a pot and bring to a boil.
  2. Once boiling, reduce the heat to low, cover the pot, and let the rice simmer gently for about 15 minutes until the water is fully absorbed and the rice is cooked.
  3. While the rice is cooking, prepare the honey mustard sauce by mixing honey, mustard, soy sauce, finely chopped garlic, paprika powder, salt, and pepper in a bowl.
  4. Heat olive oil in a large skillet over medium heat and add the chicken strips.
  5. Sauté the chicken pieces until they start to turn golden and are cooked through, about 6-8 minutes.
  6. Pour the honey mustard sauce over the chicken and stir well to coat all pieces evenly.
  7. Lower the heat and let the chicken simmer in the sauce for another 5 minutes, allowing the flavors to meld together.
  8. Fluff the cooked rice with a fork and divide it onto serving plates.
  9. Top the rice with the honey mustard chicken and sprinkle freshly chopped parsley or chives on top for garnish.
  10. Serve immediately and enjoy a delicious, quick-to-prepare family meal.

Notes

  • To vary the dish, you can swap basmati rice with jasmine rice depending on your preference. Leftovers can be stored in an airtight container in the fridge for up to 2 days and reheated gently on the stove or microwave.
