Ingredients
  

  • 2 medium sweet potatoes peeled and cubed
  • 2 tbsp neutral oil
  • 1/2 tsp cinnamon optional
  • 1 lb ground beef lean preferred
  • 2 tbsp taco seasoning
  • 1 tbsp tomato paste
  • 2 cups cottage cheese
  • 2 avocados cubed or sliced
  • 4 tbsp hot honey or to taste

Method
 

  1. Coat the sweet potato cubes with oil and season well using salt and pepper; add cinnamon if you like. Place them in a single layer in the air fryer basket and cook at 400°F for 10 to 15 minutes, shaking the basket halfway through to ensure even cooking.
  2. Meanwhile, heat a large skillet over medium-high heat and cook the ground beef, breaking it apart as it browns. Stir in the tomato paste and sprinkle the taco seasoning over the meat. Keep cooking and stirring occasionally until the beef is fully cooked and nicely browned. Remove from heat.
  3. Once the sweet potatoes are golden and tender, divide both the sweet potatoes and cooked beef evenly into four bowls. Add a generous scoop of cottage cheese and top with cubed or sliced avocados. Finish by drizzling hot honey over each bowl and serve immediately for a delicious, balanced meal.

Notes

  • For a spicier kick, add extra hot honey when drizzling on top. Enjoy leftovers refrigerated within 2 days for best freshness.
