Ingredients
  

  • 1/2 cup mayonnaise
  • 1/2 head iceberg lettuce (shredded)
  • 1/2 red onion (thinly sliced)
  • 1/3 cup banana peppers (sliced)
  • 3 sub rolls
  • 1/4 pound salami
  • 1/4 pound pepperoni
  • 1/4 pound turkey
  • 1/4 pound provolone cheese
  • 1 tomato (sliced)

Method
 

  1. In a large bowl, whisk mayonnaise with red wine vinegar, garlic powder, oregano, salt, and pepper until blended well.
  2. Fold in shredded lettuce, sliced red onion, and banana peppers, stirring gently until evenly mixed.
  3. Take each sub roll and layer inside salami, pepperoni, turkey, and provolone cheese evenly.
  4. Set the oven broiler on high and arrange sandwiches on a baking tray.
  5. Broil sandwiches for about 2 to 3 minutes, just long enough for the cheese to become melty.
  6. Remove sandwiches from the oven, top each with fresh tomato slices, then generously spoon the prepared grinder salad over them.
  7. Carefully close each sandwich and slice in half if preferred before serving.

Notes

  • For an extra zing, try adding more banana peppers or a splash of red wine vinegar to the grinder salad. Store leftover salad separately in the fridge up to 2 days.
