- 2 lbs. boneless skinless chicken thighs (see notes below if using chicken breasts)
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 1/4 cup olive oil
- 3 tablespoons fresh lemon juice
- 1 tablespoon lemon zest
- 1/4 cup minced fresh herbs* (use hardy herbs like thyme, rosemary, sage, and oregano)
- 4 garlic cloves, grated or finely minced
- If using chicken breasts: Butterfly or pound them to an even 1/2 inch thickness before adding to the marinade. Grill for 6 to 8 minutes per side, following the same marinating instructions.
