  • 1 teaspoon freshly ground black pepper
  • 1/4 cup olive oil
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/4 cup minced fresh herbs* (use hardy herbs like thyme, rosemary, sage, and oregano)
  • 4 garlic cloves, grated or finely minced

Notes

  • If using chicken breasts: Butterfly or pound them to an even 1/2 inch thickness before adding to the marinade. Grill for 6 to 8 minutes per side, following the same marinating instructions.
